Healthy Gluten Free Biscuits

THESE BISCUITS ARE AMAZING.... I really don't have much to say about them except that you NEED to try them.




RECIPE:
● 2 cups of gluten free flour (I used a mix of oat, rice, and tapioca)
● 4 TSP of baking powder
● 1 TSP of sweetener (sugar, honey, maple syrup, or coconut sugar)
● 1/2 TSP salt
● 1/4 TSP baking soda
● 3 TBSP of butter (chilled and cut into pieces)
● 3/4 cup of plain yogurt
● 1 egg
● 2 TBSP of oil (olive oil, melted coconut oil, butter, or bacon fat)
● 2 TSP of lemon juice, or apple cider vinegar
Makes about eight biscuits.
DIRECTIONS:
Mix flour, baking powder, baking soda, and salt in a bowl. Cut chilled butter into flour mixture.
whisk egg and add sweetener of choice, yogurt, oil, and lemon juice, or vinegar. Mix the wet ingredients with the dry until it becomes doughy. Scoop biscuit sized spoonfuls of dough into a greased cast iron skillet, or cake pan and bake at 450° until golden brown and delicious. Remove from oven and let cool for about five minutes.
Crumble up and pour on gravy, or simply spread on some butter! These gluten free biscuits are the best! you won't even be able to tell they're gluten free!
